To get Midwinter Proofs during the Diablo 4 Midwinter Blight event, you’ll have to begin the limited-time questline by speaking to Gileon. Once you’ve talked to him, the Collection’s Table will be unlocked. You can then use it to exchange Red-Cloaked Trophies, Lost Heirlooms, and Blighted Fragments for Midwinter Proofs. Keep in mind, though, that you will need to collect specific amounts before you can exchange these items for Midwinter Proofs.
You’ll need to accumulate 300 Blighted Fragments before exchanging it, while you’ll need 30 for Lost Heirlooms. Last but not least, the Red-Cloaked Trophy, which you can get by defeating the seasonal boss, the Red-Cloaked Horror, only requires you to have one before you can exchange it.
