How To Break Harvest Nodes
Harvest nodes are easy to break. All you need to do is have at least one equine equipped. When you find a harvest node, click on it to have your equine start attacking it. An HP bar will appear above the node and show you how much health is left.
Equipping multiple equines will speed up the breaking process.
Eventually, your equine will bring the HP bar down to zero and the node will break. You can then collect whatever rewards are inside and keep them! You'll also gain a bit of experience for your Strength Skill.
Some horse taming missions require you to collect forageables, which can be done by breaking harvest nodes!

How To Increase Your Strength Skill
Your Strength Skill determines how quickly you break harvest nodes, so it's important to build it up. Thankfully, you can break just about any node regardless of your skill, but it will take longer since your equine is unlikely to deal much damage with a low Strength Skill.
The best way to increase your Strength Skill is to break smaller nodes as often as you can. While they grant less experience, they're easier to break and you can easily knock them out one after another.
If you have multiple equines equipped, they can all gain experience together by doing this.
