You can find chickens and cows that are ready to fight you at a moment's notice, but never the deer. They always run away when you get close to them. That's why they're difficult to hunt.

Best Weapon To Use To Hunt Deer
Before you go running with your club or knife against a deer, you should know that they're skittish creatures. They will run away when you get close to them, so using a melee weapon is not ideal. Instead,you'll want to get yourself a bow. The most basic one you can get in the game is an Ash Shortbow.
You can also use an Ash Battlestaff since it's also a ranged weapon that you unlock at the same time as the Shortbow. The drawback is that the ammunition, Air Runes, is slightly harder to replace than simple wood and stone arrows. It does have the added benefit of locking onto the target at medium range or lower.
Where To Find Deer
The earliest place you can find deer is in the middle of Temple Woods and Bramblemead Valley. That's where deer usually spawn, and they run around when they feel threatened.
Unlike other animals in the area, the deer are a bit harder to find because of their lower spawn rate compared to cows or chickens.
How To Hunt Deer
With your ranged weapon of choice, you'll want to spot a deer standing still. Deer that are running away can be chased, but you'll need to keep your distance while doing so, or you'll just make them run forever.
It's best to approach them slowly and while crouching to avoid detection. The game doesn't take headshots into account, so make it easier for yourself and aim for the body of the deer. If you miss your shot, then the deer will react by running away, so take your time to aim.
Use better arrows to ensure the deer goes down in one hit. In early game, you can make Fang Arrows with fangs you can get from Giant Rats.
Deer usually go down with one good, aimed shot or two quick shots with a bow. For the Battlestaff, you'll need multiple hits, so it's best to get close to them before you start slinging your spells.
When you successfully defeat a deer, they can drop the following items:
- Raw Game Meat
- Animal Hide
- Antlers
- Animal Bones
Animal hide can be used to create leather for armor, while animal bones and antlers can be used to craft weapons, armor, or furniture. Lastly, raw game meat can be used to cook dishes.
