Sorceries Bought From Merchants
There are a few merchants scattered around the Lands Between who will sell you Sorceriesin exchange for Runes. These tend to be the more basic spells, but don't discount them — they can be highly useful throughout your adventure, and especially in the early game. It's worth grinding a few Runes and picking them up, just in case.

Miriel, Pastor Of Vows Location
You'll find Miriel, a most excellent holy tortoise, in the Church of Vows. Starting at the Eastern Liurnia Lake Shore Site of Grace, head north and when the path forks, take the left option. Do this twice more, and you should see the ruined church at the top of the hill. Be mindful of enemies that spawn near the entrance.
Gowry Location
For this one you'll need to head to eastern Caelid, where you can find Gowry's Shack just south of Sellia, Town of Sorcery. However, in order to unlock his wares you'll need to progress Millicent's questline. Try to avoid aggroing enemies before you enter the shack, as you could accidentally kill Gowry.
Preceptor Seluvis Location
In order to reach Preceptor Seluvis, you're going to need to progress through Caria Manor and defeat Royal Knight Loretta. This opens up the path to the Three Sisters area. Be mindful that there's a whopping great dragon in the area you'll need to get past.
Sorceress Sellen Location
This NPC has her own rather lengthy questline, but you can purchase her spells at the first location you meet her. Head to the Waypoint Ruins in Limgrave, and find the steps down to the cellar. In the first room you'll have to defeat the Mad Pumpkin Head boss, so come prepared. Once done, enter the room behind it to find Sellen.
Sorcerer Thops Location
This student of the Raya Lucaria Academy is found at the Church of Irith in Liurnia, on the other side of Stormveil Castle. You don't need to have passed through the castle to reach him, instead taking the path through the trees north of Stormhill Shack and keeping left as you round the castle. When you reach the Lake-Facing Cliffs Site of Grace, you'll see the ruined church to the southwest.

Sorceries Sourced From Scrolls
Certain Sorceries only become available once you've found the appropriate instruction manual, known as a Scroll. There are three of these scrolls, teaching a total of six spells.
Once obtained, you can give these to a number of trainers: Gowry, Miriel, Rogier, Sellen, Seluvis, or Thops. Of these, we'd recommend Miriel at the Church of Vows, as the holy tortoise doesn't die, disappear, or move location with the progression of quests. Once handed over, you can purchase the spells anytime you please.

These Sorceries are available more or less any time, with the only barrier being your ability to access the location and survive long enough to pick them up. Some areas will need to be unlocked first, but time and maybe a boss or two are the only constraints.

While traversing the Lands Between you may come across magical beetles known as Teardrop Scarabs, pushing their glowing wares. Some of these contain valuable items, such as Ashes of War, Incantations, and Sorceries. They'll try to escape, so smack them before they disappear to claim their bounties. You may even need to anticipate the path of an invisible beetle, based on their footprints.

Great Oracular Bubble Location
The best place to start is either the Ancestral Woods or Mimic Tear Sites of Grace. Make your way to where the long bridge passes over a road. Head down a slope to the left, under the bridge, and drop down to the platform with the stone columns.
CloseHead along this platform to its end and drop down again, taking care not to die from fall damage, then down again to another platform. Use the stone column to hop down further, through the archway, and round to the right.
CloseTake a left where you see some broken stones, then drop down once more. Head round to the left and use the collapsed column to reach ground level with the water, then turn around to see a large, dark entrance. The Scarab is in here, but be careful as there are many clay enemies in here who hit hard.
Oracle Bubbles Location
For this one, you'll need to use the walls of the ruins near the Siofra River Well Depths Site of Grace to access the Teardrop Scarab, who is hanging out on top of a stone statue you can't reach without descending from above.
CloseHead up through the ruins until you're out the other side, with the waterfall in the distance. Double back 'behind' the walls of the ruins, and use the walls to climb up and over so that you're in the southwest of the area.
CloseCarefully drop down to the next level, then down onto the statue where the Scarab is waiting. It'll drop off, so quickly follow it and defeat it to claim the spell.

Enia's room within Roundtable Hold will unlock after you've defeated a boss that holds a Great Rune.
When exchanging a Remembrance with Enia you'll be offered a choice of two items. Typically, selecting one item will make the other unobtainable.
There is a limited number of chances to duplicate a Remembrance, however, through accessing one of the seven Walking Mausoleums in the Lands Between.
You can use each of these just once, and you don't need to have the Remembrance in your inventory to be able to copy it.
