The first bounty made available to you in Metaphor: ReFantazio is 'Man's Not-So Best Friend Bounty' that will see you travelling back to the Tradia Desert, though in a different section to the one you stumbled through to get to Grand Trad.

How To Unlock The 'Man's Not-So Best Friend' Bounty
Like other bounties, this can be accepted from the Recruiter Dispatcher in the Recruitment Centre in Grand Trad. It becomes available from 6/16 and there is no deadline so you can complete it in your own time.
It's worth noting that it takes a day to complete as you have to travel to the Tradia Desert.
Quest Prep
You can go and speak to the Informant in the Hushed Honeybee inn to learn more. It'll cost you 150 reeve to learn about the Lord of Tradia Desert, but we also cover all that information here so feel free to save yourself that pocket change.
Other than the usual of ensuring you have some HP recovery items just in case, the only thing you might need to worry about is ensuring you have some Robust Remedies (160 reeve each) to cure Poison in a pinch. These can be bought from Comfort Concoctions in Grand Trad.
If you are going with your Protagonist on Healer, they'll have Patra to cure Poison anyway.
Recommended Party Setup
There's a lot of wiggle room for how you can have your party as Maneater Manjula is not the most challenging bounty you will face. However, we've detailed below the setup we used and why.

It's worth having the protagonist as the healer but with the ability to cast Ice attacks and have a Mace/Staff to hit Maneater Manjula's weaknesses. You can either Healer with Blizz inherited, or Mage with Dei (from Seeker) or Medi (inherited from Healer).
We don't recommend using Seeker because it has a weakness to Fire.
Strohl
Warrior/Brawler/Knight
Front
Strohl likely has Warrior levelled the most by the time you take on this bounty, so that's likely the one to go for, especially as it's resistant to Fire attacks. However, any physical damage dealing Archetype is good and if you can throw in Blizz inherited from Mage or an Igniter is a bonus.
Hulkenberg
Knight/Warrior/Brawler
Front
Much like Strohl, I'd go with whatever you have levelled the most on Hulkenberg and if you can get her an Ice attack too, that will help.
How To Spawn Maneater Manjula
When you enter the Tradia Desert, you'll quickly be told you can't just hunt down the Maneater Manjula, you have to lure it out by attacking the packs of Hyeno.
There are three packs of Hyeno on the map, they are roaming a bit but roughly can be found in the upper west, to the east of the middle, and south of the map. They are all marked on your map and are easy to locate.
These enemies are fairly easy to defeat, in fact there's a good chance you won't even need to enter into Squad battles to tackle them. However, we've covered their movesets and affinities below just incase.
Once the final Hyeno has been defeated, you will be automatically be thrown into battle with the Maneater Manjula after a short cutscene.

Battle Strategy
Maneater Manjula is weak to both Ice and Strike attacks, so this is what we want to focus on the most while ensuring your party stays healed.
This battle shouldn't prove too challenging, difficulty level depending, and all you need to watch out for is keeping your party members' HP topped up and Poison cured as needed.
Simply keep attacking to whittle down its HP and make the most of its weaknesses of Ice and Strike as much as you can.
Rewards For Defeating Maneater Manjula, Fiend Of The Wastes
You'll earn 10,000 reeve as well as earning four points of Courage for completing the Bounty.
Additionally, you'll get a Rusted Weapon and Bone Helm for defeating the Maneater Manjula, as well as a Rampager Tail to prove you completed the bounty.
